Just to once again say how really great it is, it handles very well almost becoming an extension of my hand. Tackles both meat and veggies with such ease! Never before been able to slice and dice with the precision that this tool offers! for me personally the weight/balance is spot on, after using it to cook all evening my arm doesn’t tire out like it has done in the past when using the likes of Ran knives for example. The edge itself nice to maintain, that being said I’ve found it hardly wears - again compared to knives I’ve previously used. All in all I am tremendously impressed and I’m very excited to see what you create in the future!
